Ginger Snaps (Weight Watchers, 2 points / cookie)
Ingredients
- 1 cup Packed Brown Sugar (I use 1/2 Splenda mix)
- 3/4 cup Sugar (Splenda)
- 1/4 cup Molasses
- 1/4 cup Shortening
- 1 tbsp Softened Butter (Brummels and Brown)
- 1 egg (1/4 cup Egg Beaters)
- 1/2 tsp Vanilla
- 2 1/2 cups Flour
- 2 tsp Baking Soda
- 2 1/2 tsp Ground Ginger (more if wanted)
- 1 tsp Ground Cinnamon
- 1/2 tsp Ground Cloves
- 1/2 tsp Salt
- 1/4 cup Coffee or Water
Preparation
- Preheat oven to 350 degrees
- Cream together Brown Sugar through Vanilla
- Combine the dry ingredients in another bowl
- Pour dry into wet, mix well
- Add coffee and knead until ball holds together
- Cut ball into 4ths and each part into 12ths
- Wet hands and roll each dough section into a ball
- Press and flatten ball on cookie sheet. (Use Parchment)
- Bake for 10 minutes
